Donati Family Vineyard Cabernet Sauvignon 2016 750ML

 

Successful winemaking must be a cooperative effort on behalf of our vineyard and winemaking teams. Under the direction of our winemaking team. Donati Family Vineyard grapes are grown to standards that deliver the highest quality. The vineyard field staff monitors the vineyard blocks throughout the year and pick the grapes at the ideal time.

Once the grapes arrive at the Paso Robles winery they are again inspected for quality. For our white wine program, a whole cluster press is used to extract the juice. After a gentle pressing, the juice is immediately transferred to stainless steel fermenters for a 24 hour cold settling. The white juice will ferment for approximately 30 days at 55F until dry, yielding no residual sugar. Post-primary fermentation the whites are fined and filtered before being bottled the following spring to preserve the aromatic qualities in each variety.

Red grapes are de-stemmed and pumped directly into the fermentation tanks. We utilize both static and open top fermenters in our program. During fermentation, the must is allowed to reach temperatures up to 85F to extract the intense color and flavors the Donati wines are known for. The red varietals will ferment for 7-10 days, then the wine is racked to another tank and the remaining skins, seeds, and pulp is gently pressed.

The aging process for our red wines begins in a combination of both French and American oak barrels from a select group of coopers. The red wines are barrel aged for 12-18 months. During this time, a continuous sensory assessment of each lot gives us the ability to designate the premium lots for our higher-end wines. When those lots are selected the wine is racked and blended and stored in barrels until bottling. The red wines are bottled unfined and unfiltered to preserve natural flavors and aromas the grape varietals have to offer.

Shipping Policy

Wines are usually shipped within one to two business days. All shipments are delivered via UPS, FedEx, GSL. Delivery is not available for P. O. Boxes. Most of our wines have free shipping available for 6+ bottle shipments. The shipping rate is $12 for 3 to 5 bottles and $16 for 1 to 2 bottle(s).


Once your order has been shipped, you will receive an email with your shipment tracking information, which can be used to track your package through the carrier’s tracking system. An adult signature is required to complete the delivery. The package will not be delivered to anyone intoxicated or under 21. Most carriers will attempt delivery a maximum of three times, then return the shipment to us. If a shipment is returned, we will charge you an additional shipping charge to re-ship your items. Please make arrangements with the shipping carrier noted on your shipment confirmation email if you are not able to receive and sign for the shipment. Most carriers have options to retain the shipment at their local office for pickup at your convenience.


Restricted States

We can't ship to Alabama, Kentucky, Mississippi, Utah, Alaska, Hawaii, and Puerto Rico. Please check your state's requirements before purchasing.

You must be 21 years old to purchase wine from Vinobee. By purchasing, you represent yourself as 21 years old and understand that a person of at least 21 years old will be required to sign for the wine upon delivery.


Holds on Wine Shipment During Summer Months

During summer months, we will hold shipment of your order if you request and keep your wine stored in our facility until the weather is more suitable for wine shipment. To hold your order, please tell us in the "Comment" section of the order during checkout. Please also include the date which you would like us to ship your package. We will hold your wine for free for up to 6 months.


Wines Damaged During Shipment

In the small chance that you receive a damaged bottle of the wine from Vinobee, please contact us within 2 weeks of your purchase date. To ensure our quality control is up to date, we may ask you to submit pictures and or return any unopened bottles for inspection. You may be entitled to a replacement or a refund, but that will be determined by our staff once your case is reviewed.


Shipping during the summer months of the year has an increased risk of heat damage. Vinobee is not responsible for wine damaged due to heat. It is the customer's responsibility to be aware of shipping weather conditions when ordering.


Disclaimer

If you decide to order and ship the wine during the summer months, the heat can cause the wine to expand and push against the cork, perhaps leaking past an imperfect cork. Some buyers may find this upsetting, but typically such short-term heat exposure creates no damage to the wine itself. However, do take care with older vintages, as they can be more fragile than newer ones. Slight leakage or seepage can be common during shipping and is not a valid reason to return the wine for a refund. If you are concerned about the heat damage, it’s best to wait until cooler months to order.
